Tasting tip :
Be careful the truffle is very aromatic: it is therefore necessary to put a little bit of it whatever your preparations. In your fresh foie gras, never exceed 5% of the total weight (ideally 3%). Keep your truffle juice for your sauces. You can freeze it, it will withstand the extreme cold.
