Yes, in the duck, everything is eaten. Even the duck's carcass, once all the pieces have been removed, remains fleshy. This is why it is preserved in its entirety to obtain this wonderful local product, well known to our local people.
In our regions, these candied duck carcasses are sometimes called "Demoiselles" (duck).
